Grade AAA Swordfish Belly, known in the industry as Pure Sashimi Grade Mekajiki, has deep pink, creamy flesh with consistent texture.

Swordfish of this grade are frozen at minus 60 deg Celsius on board the fishing vessel and cold-chained all the way at these ultra low temperatures to preserve the quality of the Swordfish. Upon slow defrost, the quality of this swordfish will be as good as fresh.

Used by upper mid-tier to fine-dining establishments.

We also carry Grade AA for normal usage. This is more white flesh and sometimes slightly pink. We are one of the main importers of swordfish belly in Singapore and we are in position to offer a better price and quality proposition to our customers.
